The milk and cream for Tiroler Edle come from Tiroler Grauvieh, a breed of cattle that has been native to the Tyrolean mountains for over 3,000 years and is now only kept by a few dedicated mountain farmers. The valuable milk is collected separately on small farms (with 5 to 15 cows) for Tiroler Edle. The summer months are spent on the Tyrolean mountain pastures by the “Edle”, as the gray cows are affectionately called by their farmers.
